Cink (Zn) je esencijalni mineral, \u0161to zna\u010di da ga moramo unositi putem hrane. Drugi je najzastupljeniji element u tijelu, nakon \u017eeljeza. Preporu\u010deni dnevni unos cinka varira, ali prema EFSA-i referentni unos bi trebao biti u rasponu od 9,4 do 16,3 mg\/dan za mu\u0161karce te 7,5 do 12,7 mg\/dan za \u017eene. Prevelike doze cinka (vi\u0161e od 150 mg\/dan) mogu izazvati probavne tegobe. Dugotrajno uzimanje doza cinka iznad 60 mg\/dan mo\u017ee poremetiti apsorpciju bakra.&nbsp;<\/p>\n\n\n\n<p>Procjenjuje se da je otprilike 17% do 20% svjetske populacije izlo\u017eeno riziku od nedostatka cinka. Procijenjena prevalencija neadekvatnog unosa cinka najve\u0107a je na jugu Azije (30%) i u Africi (26%), dok se prevalencija u zemljama s visokim udjelom procjenjuje na 8%. Nedostatak cinka mo\u017ee imati razli\u010dite simptome: usporeni rast, alopeciju, proljev, odgo\u0111eno spolno sazrijevanje, impotenciju, lezije o\u010diju, oslabljen apetit te nedostatak mirisa i okusa. Kod odraslih, naro\u010dito starijih osoba, nedostatak cinka mo\u017ee izazvati sporije zacjeljivanje rana i smetnje u kognitivnim funkcijama. Zanimljivo je da se ove promjene doga\u0111aju i ako su koncentracije cinka u krvi normalne, ali bli\u017ee donjim grani\u010dnim vrijednostima. Odre\u0111ene skupine imaju ve\u0107i rizik od nedostatka cinka, uklju\u010duju\u0107i pojedince koji primarno jedu biljnu hranu, trudnice ili dojilje, starije odrasle osobe, pojedinci s gastrointestinalnim poreme\u0107ajima ili koji su imali barijatrijsku operaciju te osobe s poreme\u0107ajem u konzumaciji alkohola.<\/p>\n\n\n\n<p>Cink je zna\u010dajno prisutan u hrani \u017eivotinjskog porijekla kao \u0161to su meso, kamenice, jetra, jaja. Iz hrane se apsorbira u gastrointestinalnom traktu u krvotok i putem krvnih proteina dalje transportira do ciljnih tkiva i organa. U hrani biljnog porijekla nalazi se u grahu, \u017eitaricama, sjemenkama, ali je njegova iskoristivost ote\u017eana zbog sadr\u017eaja fitata koji ve\u017eu cink i usporavaju apsorpciju.<\/p>\n\n\n\n<p>Zbog \u0161irokog spektra djelovanja na na\u0161 organizam, cink se smatra jednim od \u017eivotno va\u017enih minerala. Kada govorimo o njegovim ulogama u organizmu, najvi\u0161e je poznato antioksidativno djelovanje, jer \u0161titi na\u0161e stanice od oksidativnog o\u0161te\u0107enja. Bitnu ulogu ima u zarastanju rana i zdravlju ko\u017ee jer poma\u017ee zacjeljivanje i djeluje protuupalno. Cink je va\u017ean u raznim fiziolo\u0161kim funkcijama kao \u0161to su dioba stanica, sinteza proteina te sinteza DNA i RNA. Odgovoran je za ekspresiju razli\u010ditih gena budu\u0107i da mnogi transkripcijski \u010dimbenici posjeduju receptore za cink. Zato ka\u017eemo da je cink neophodan za normalan rast i razvoj. Ipak, potrebno je naglasiti da cink ima mnogo \u0161ire djelovanje na na\u0161 organizam.<\/p>\n\n\n\n<p>Podr\u0161ka je imunolo\u0161kom sustavu kroz aktivaciju i proizvodnju T-limfocita koji su odgovorni za borbu protiv patogenih mikroorganizama. Cink regulira unutarstani\u010dne signalne putove uro\u0111enih i adaptivnih imunolo\u0161kih stanica.<\/p>\n\n\n\n<p>Cink je va\u017ean i kao podr\u0161ka endokrinolo\u0161kom sustavu. Naime, cink je neophodan za formiranje i strukturnu stabilnost inzulina. Zato beta stanice gu\u0161tera\u010de sadr\u017ee vi\u0161e cinka. Ioni cinka djeluju na inzulinski signalni put i stimuliraju lipogenezu i unos glukoze u adipocite. Cink ima va\u017ene uloge u metabolizmu hormona \u0161titnja\u010de, kao \u0161to su anabolizam proteina i pove\u0107anje bazalnog metabolizma te rast kostiju kod djece. Regulira sintezu tiroidno-stimuliraju\u0107eg hormona (TSH). Zato se kod nedostatka cinka u organizmu smanjuje razina TSH, serumskog trijodtironina (T3) i tiroksina (T4). Neke studije sugeriraju da kroni\u010dni nedostatak cinka mo\u017ee biti uzrokom subklini\u010dke&nbsp;hipotireoze.<\/p>\n\n\n\n<p>Ovaj mineral ima bitnu ulogu i kod plodnosti, posebno kod mu\u0161karaca. Zbog svog na\u010dina djelovanja mogao bi biti va\u017ean \u010dimbenik u prevenciji i lije\u010denju mu\u0161ke neplodnosti.<\/p>\n\n\n\n<p>Ljudska mre\u017enica sadr\u017ei cink u visokim koncentracijama. Studije su ukazale na povezanost visokog unosa antioksidansa uklju\u010duju\u0107i cink i smanjeni rizik od degeneracije makule povezane sa starenjem (AMD), koja je vode\u0107i uzrok gubitka vida. Studijama su predlo\u017eene prednosti suplementacije antioksidansima, uklju\u010duju\u0107i cink, u usporavanju napredovanja AMD-a i prevenciji&nbsp;o\u0161te\u0107enja stanica mre\u017enice.<\/p>\n\n\n\n<p>Ipak, posebnu pozornost izaziva djelovanje cinka na \u017eiv\u010dani sustav. Cink je va\u017ean za normalan razvoj i funkcioniranje sredi\u0161njeg \u017eiv\u010danog sustava. Nedostatak cinka utje\u010de na homeostazu cinka u mozgu, \u0161to mijenja pona\u0161anje, u\u010denje, mentalne funkcije i pove\u0107ava rizik od epilepti\u010dkih konvulzija. Depresija i anksioznost naj\u010de\u0161\u0107i su psihi\u010dki poreme\u0107aji dana\u0161njice. Posljedica su na\u0161eg na\u010dina \u017eivota i kroni\u010dnog stresa. Me\u0111utim, zanimljivo je da bi prehrambeni deficiti koji su opet posljedica sjedila\u010dkog na\u010dina \u017eivota te nedostatka&nbsp;mikronutrijenata (posebno minerala), mogli biti jedan od uzroka \u010de\u0161\u0107e pojave anksioznosti i depresije. Pokazalo se da nedovoljan unos hranom ili niske razine cinka u krvi doprinose depresiji me\u0111u studenticama, te da je cink neophodan su-\u010dimbenik za odr\u017eavanje pravilnog rada brojnih enzima s klju\u010dnim funkcijama u mozgu,&nbsp;te je uklju\u010den u nekoliko brojnih strukturnih elemenata proteina. Meta analiza prou\u010davala je 9 studija koje su procjenjivale odnos konzumacije cinka i anksioznosti, a pokazala je da pacijenti s anksiozno\u0161\u0107u imaju ni\u017ee razine cinka u serumu. Dosada\u0161nja istra\u017eivanja ukazuju na \u010dest nedostatak cinka me\u0111u psihijatrijskim bolesnicima i implicira njegovu va\u017enost u signalnim putovima u mozgu. S druge strane, ne treba zaboraviti da mo\u017ee biti i sna\u017ean neurotoksin u prevelikim dozama.<\/p>\n\n\n\n<p>Alzheimerova bolest je multifaktorski&nbsp;kroni\u010dni neurodegenerativni poreme\u0107aj i naj\u010de\u0161\u0107i uzrok demencije u gotovo 95% slu\u010dajeva. Obi\u010dno je vezana za starost, ali se mo\u017ee javiti i ranije uslijed genetske sklonosti. I dalje se radi na otkrivanju uzroka. Jedan od predlo\u017eenih mehanizama nastanka je i nedostatak cinka koji se ina\u010de nalazi u velikim koli\u010dinama u \u017eiv\u010danom korteksu. Me\u0111utim, stavovi i istra\u017eivanja na ovu temu dosta su razli\u010diti. Prevelika koli\u010dina cinka mo\u017ee poja\u010dati nastajanje beta-amiladnog plaka, koji se prema jednoj teoriji smatra uzrokom nastanka ove bolesti. S druge strane, cink djeluje neuroprotektivno i neophodan je za funkcioniranje mnogih enzima u mozgu. Nedostatak cinka tako mo\u017ee utjecati na smanjenu aktivnost ovih enzima, uklju\u010duju\u0107i i one koji sudjeluju u sintezi neurotransmitera (poput acetil&nbsp;holina). Dakle, kod tretmana Alzheimerove bolesti i cinka, jako je va\u017eno voditi ra\u010duna o dozama koje se koriste kako se ne bi postigao suprotan u\u010dinak.<\/p>\n\n\n\n<p>Multipla skleroza (MS) je autoimuna bolest u kojoj imunolo\u0161ki sustav napada mijelinsku ovojnicu \u017eiv\u010danih vlakana. Cink ima klju\u010dnu ulogu u regulaciji imunolo\u0161kog sustava. On je poznat po svojoj sposobnosti da utje\u010de na aktivnost T-stanica koje igraju klju\u010dnu ulogu u upalnim&nbsp;reakcijama kod MS-a. Istra\u017eivanja pokazuju da cink mo\u017ee modulirati upalne procese, \u0161to bi moglo biti korisno za osobe s MS-om, jer se upala smatra jednim od glavnih uzroka progresije bolesti.
